A Toast to A Wise Gourmet
Our Favorite French Restaurants in New York and In Vancouver
To truly test our wise gourmet philosophy we set out to try French cuisine and wines in two cities known for their love for food. In our quest, we also tried restaurants owned by the same chef so that we could test the quality of the food and service in different cities and venues. We were not disappointed.
At wise gourmet we seek restaurants that combine the use of locally grown fresh ingredients with traditional cooking techniques that are influenced by flavors from various cuisines. Such cuisine demonstrates creativity in achieving clean, delicious dishes that feature delicious flavors from vegetables, herbs and light broths instead of heavy creams. A wise gourmet watches not only his/her wallet but also the calories and type of fat that he/she consumes.
Our wise gourmet dining exploration took us to two restaurants; one in the East of the United States and one in the West coast of Canada. We dined at Nougatine in New York City and in Market by Jean George in Vancouver, both owned by Chef Jean George Vongerighten.
Jean George is well-known in the restaurant scene as the owner of his name sake restaurant in New York and 20 other such gems around the globe. He was born in Alsace and studied at Augerge de I’ll as an apprentice to Chef Paul Haeberlin. During his long and industrious career, Jean George has worked under Paul Bocuse and other impressive three star Michelin restaurants. His traditional training has been influenced by his travels to Asia where he worked at the Meridien Hotel in Singapore and Mandarin Hotel in Hong Kong.
As a well-travelled chef, his cuisine is influenced by the “exotic and aromatic flavors of the East”. Although it is quintessentially traditional French, his cooking features “the intense flavors and textures from vegetable juices, fruit essences, light broths, and herbal vinaigrettes”. It is the combination of excellent ingredients, cooking techniques and flavors that make his restaurants exceptional.
